It has been about 4 months since my last post and for a good reason too. My husband and I had decided to embark on a healthier lifestyle, starting with the food we put into our body (we are what we eat right?). And for some reason, low carb “diet” seems a workable diet for us since it offers some sort of supplement to our existing diet. So I bought a copy of Doug Varrieur’s “Fat to Skinny.
Fast forward 3 months and 5 days and 12 lbs lighter (mostly belly fat! Yay!!), we are still watching our carbohydrate intake and trying to keep within 50g net carb every day. Its a challenge and I’m one of those people who weigh themselves every single morning. I know, my doctor advised me against it but I uses the numbers to push me forward. I’m result-oriented so that kinda worked for me.
So anyway.. I had come across alot of recipes. Some low carb ones and some not so low, but healthy. And since I know quite a lot of you are carb addicts like me, and the idea of cutting your daily bread (or even your morning cereal) out of your life is out of the question, so I thought to post some low carb recipes on here.. and some healthy recipes, that is not low in carbohydrates (mostly sugar) but loaded with goodness for you and your family.
I’m going to share a recipe I found on a Facebook Group I belonged to. K. Winfield-Franks shared her (adapted) recipe she took from joyfulabode.com and I thought to give it a shot since I am becoming a big fan of Almond Meal. Here goes:
Ingredients:
- 1.5 cups Almond Meal
- 3 large Eggs
- 1 Tbsp Flax (I use grounded flax seed from Bob’s Red Mill)
- 2 mashed Banana (I used medium sized over-riped ones)
- 1 tsp Pumpkin Pie Spice
- 1/2 cup chopped Pecans
- 1 tsp Vanilla
- 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 2 to 4 Tbsp water
Just just in case you are in the market for a good waffle maker, I’ve got a recommendation for you! We simply love our Proctor-Silex! Its inexpensive, reliable (ok, 90% of the time.. the 10% was mostly our fault) and best of all, it doesn’t take up much space in your kitchen!
